Pumpkin Spice Cupcakes


The legitimate definition:
> Pumpkin: a gourd-like squash of the genus Cucurbita and the family Cucurbitaceae.

MY definition:
> Pumpkin: a delicious flavor found in various bakery items that represents fall to its fullest extent, beautiful & delicious.

This week I decided to take what I know about the delicious pumpkin flavor and put my own little twist on it, by adding it to Spice Cake Mix.

And by topping it with a homemade Cinnamon Cream Cheese Frosting, YUM!
Pumpkin Spice Cupcakes

**Make sure you have Cupcake Pan Liners before starting this recipe!
**Also, you do not need a KitchenAid for this recipe, but it is greatly recommended. 

For this recipe, you need two different sets of ingredients:


  • Spice Cake Mix
  • 3 Large Eggs
  • 1 1/3 Cup Water
  • 1/3 Cup Vegetable Oil
  • One 15oz Can of Pumpkin Puree

Cinnamon Cream Cheese Frosting

  • One package of cream cheese, softened
  • 1/4 cup of butter, softened
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 cups of powdered sugar

Steps to making Pumpkin Spice Cupcakes!

1) In your KitchenAid (or by hand) mix the Spice Cake Mix, 3 Large Eggs, 1 1/3 Cup Water, 1/3 Cup Vegetable Oil, and the 15oz Can of Pumpkin Puree.

2) Mix until you get a nice light brown color and all ingredients are fully mixed.

3) Now is the time to line your cupcake pan with your cupcake liners!

4) Fill the liners about 3/4 of the way full with the help of a large spoon.

5) Put your cupcakes into the oven at 350°F and put your cupcakes in for 20 Minutes.

6) After your timer has rung, put your cupcakes on a safe surface to cool.

Steps to making Cinnamon Cream Cheese Frosting!

1) In your KitchenAid (or by hand) mix your softened package of cream cheese, softened 1/4 cup of butter, 1 teaspoon of cinnamon, 1 teaspoon of vanilla extract, and 3 cups of powdered sugar.

2) Mix until all of the ingredients are fully mixed and you have a nice tan color.

**Before frosting your cupcakes, make sure the cupcakes are cooled throughly. If needed, put frosted cupcakes in refrigerator to cool.
